Happy Easter!
I made so many desserts this weekend; A LOT of desserts. It was a marathon baking day in the kitchen, and honestly I had so much fun. I think I spent close to 12 hours working on a variety of treats to share with family and friends for the holiday. I have never taken on a task quite like this, however if I learned anything this weekend it’s that I want to make food for loved ones all the time and it doesn’t matter to me how long I spend working on it.
I certainly experienced highs and lows while making these desserts. My mother-in-law is gluten free, so I wanted to make a couple desserts for her. I haven’t had much success with gluten free baking but figured I’d give it a go. The cupcakes pictured above I made gluten free using a regular recipe and measure-for-measure gluten free flour, and I really struggled with them. I had a difficult time getting them to rise and bake all the way through, and then most of them cracked down the middle and sunk. Honestly, I felt defeated. However, I was determined to make them work. After decorating them I was pleased with how they looked and I think they still taste good. Just goes to show that looks aren’t everything.
My favorite dessert to make was definitely the cookies and the pies. Those came out delicious and I liked experimenting with them. I made lemon pudding cookies and the mint chocolate pudding cookies that I made for St. Patrick’s Day. I tweaked one of the recipes and added raspberries and they turned out delicious! I also made chickpea blondies that were gluten free as well. They have peanut butter and chocolate chips in them so you don’t even taste the chickpeas!
